5 Easy and Healthy Air Fryer Recipes

If we've had a conversation in the last six months, then you know how much I love my air fryer. It was a Christmas gift last year that I didn't even open for a couple months because I didn't know what to do with it. Well, once I did my life was forever changed (dramatic but true)!

Let me start by saying that I'm pretty sure you can cook anything in an air fryer. I've done vegetables like brussel sprouts, carrots, eggplant, cabbage, etc., meat, salmon, potatoes, chick peas, all types of squash - so many foods I can't even remember. Anything.

It was intimidating at first because hearing 'fryer' I assumed I'd need a lot of oil and that it would be a tedious process. Wrong! You can use oil when you prepare your air fryer meals but you don't have to. I will tell you that depending on what I'm cooking, I sometimes use extra virgin olive oil or coconut oil (both in very small amounts - a little really goes a long way) or I just use a cooking spray.

So without further adieu, here are 5 super easy meals you can prepare in your air fryer!

Keep in mind, these are the recipes I personally use. I am not a chef but I will say they always come out GREAT!

Air Fryer Roasted Potatoes

- 2 large potatoes (any variety)

- 1-2tbsp EVOO (or coconut oil OR cooking pray to coat potatoes with)

- seasonings of your choosing - I like to use salt, pepper, garlic powder, paprika, rosemary and thyme but get creative!

Directions:

-Preheat air fryer to 370 degrees.

-Cut up your potatoes however you prefer - cubed or in the form of fries (highly recommend!).

-In a bowl, combine your potatoes with the oil and spices. Toss around to coat. I use my hands - it's just easier and more efficient.

-Place potatoes in air fryer basket and set the timer for 15 minutes. At that point, open the air fryer and toss potatoes around. Assess their level of done-ness and cook for another 6-10 minutes. Cooking time will depend on the size of your potatoes (you can always use more or less potato) and how crispy you like them.

Air Fryer Roasted Squash (butternut, acorn, honeynut, any other variety)

If this recipe looks oddly familiar, it's because it is exactly the same as the roasted potatoes. How easy is that!

- 1 squash (any variety)

- 1-2tbsp EVOO (or coconut oil OR cooking pray to coat potatoes with)

- seasonings of your choosing - I like to use salt, pepper, garlic powder, cumin, turmeric and chili powder but get creative!

Directions:

-Preheat air fryer to 370 degrees.

-Cut the ens off your squash and throw them away.

-Cut your squash in half and using a spoon, scoop out the center with the seeds.

-Slice your squash and continue to cut it however you prefer - I usually cut it into cubes as evenly as I can.

-In a bowl, combine your squash with the oil and spices. Toss around to coat. I use my hands - it's just easier and more efficient.

-Place potatoes in air fryer basket and set the timer for 12 minutes. At that point, open the air fryer and toss potatoes around. Assess their level of done-ness and cook for another 6-10 minutes. Cooking time will depend on the size of your squash and how well done you want it.

*Tip - this recipe can be applied to any vegetable (such as carrots or eggplant) with the variables being cooking time and spices. It really is that easy! I would recommend heating to 370 degrees and cooking veggies for 10 minutes and go from there.

These are great for a snack or to add to any meal.

- 1 15oz can of chick peas, drained and rinsed using a colander. Rinse with cold water.

Directions:

-Preheat air fryer to 390 degrees.

-Toss chick peas with oil and spices.

-Place chick peas in air fryer basket and cooking for 12 minutes, shaking a few times during the process.

-When the chick peas are cooked, you can remove them from the air fryer and add salt and pepper if you feel they need it

Air Fryer NY Strip Steak

-2 organic grass fed NY Strip Steaks. This recipe is for 2 steaks about 6-8oz.

You can use any steak

-salt and pepper to taste

-1 tbsp low-sodium soy sauce

-1 tsp liquid smoke

-1 tbsp McCormick’s Grill Mates Montreal Steak Seasoning or Steak Rub (or season to taste)

* You can use any marinade you prefer or melted butter.*

Directions:

- Drizzle steak with soy sauce and liquid smoke.

-Season steaks with seasonings and place in ziplock bag for a few hours - overnight

-Cook steaks on 375 degrees for 5 minutes. After 5 minutes, examine your steak. Cook time will depend on how you like your steak. For a medium steak, after 5 minutes I flip it over and cook for an additional 2 minutes for a total cooking time of 7 minutes. This can vary depending on which air fryer you have, so make sure to cut into it after 5 minutes and check.
